What the title says. Hummus with beets. It adds a twist to the traditional hummus and makes for a much more colorful presentation. Ingredients:
1/3 c olive oil |
1 chopped onion |
16 ounce can of beets, drained |
1 c hummus |
2 crushed garlic cloves |
1 tbsp cumin |
1 tbsp lemon juice |
Directions:
1. Fry the onion in 1 Tbsp of oil until soft. 2. Put all ingredients except the oil into a food processor and process until smooth. 3. Transfer to a serving bowl and drizzle the remaining oil on the top. |
