Hummus Crushed New Potatoes

These garlicky new potatoes make a great side dish to many meats and fish.
Ingredients:
1 lb new potato
3 tablespoons hummus
10 green olives, pitted and chopped
1/2 ounce flat leaf parsley, chopped
salt and pepper
Directions:
1. Cook the potatoes in boiling salted water for 15 mins or until tender.
2. Drain well, return to the pan and gently crush with a fork.
3. Stir through the hummus, olives and parsley then season well.
4. Serve.
