Classic chickpea dip Ingredients:
8 oz chickpeas |
4 tablespoons lemon juice (1 lemon) |
2 tablespoons tahini |
1 garlic clove, crushed |
6 oz water (including the canning liquid) |
1/2 teaspoon ground cumin |
1/2 teaspoon salt |
1 teaspoon olive oil |
1/2 teaspoon paprika |
Directions:
1. If canned, drain the chickpeas but reserve the canning liquid 2. Place the chickpeas in a small blender with the lemon juice, tahini and crushed garlic 3. Start blending and add enough water/liquid to make a paste of a creamy dipping consistency 4. Stir in the ground cumin 5. Serve sprinkled with paprika and drizzled with the olive oil |
