Classic chickpea dip
Ingredients:
8 oz chickpeas
4 tablespoons lemon juice (1 lemon)
2 tablespoons tahini
1 garlic clove, crushed
6 oz water (including the canning liquid)
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 teaspoon olive oil
1/2 teaspoon paprika
Directions:
1. If canned, drain the chickpeas but reserve the canning liquid
2. Place the chickpeas in a small blender with the lemon juice, tahini and crushed garlic
3. Start blending and add enough water/liquid to make a paste of a creamy dipping consistency
4. Stir in the ground cumin
5. Serve sprinkled with paprika and drizzled with the olive oil
