This is a quick-to-put-together spread that you can really jazz up with whatever you have on hand. Delicious! Ingredients:
2 small containers of roasted red pepper hummus (or regular) |
1 10 oz can ripe pitted olives, drained and chopped finely |
2-4 tbsp greek vinaigrette or italian dressing |
2 garlic cloves, finely chopped or minced |
1/4 c chopped fresh parsley |
assorted crackers or bagel chips or pita breads for serving. |
Directions:
1. Spread the hummus on a 10 inch serving plate. 2. In a small bowl mix all remaining ingredients together then carefully spread over hummus. 3. Serve with the crackers, etc. |
