Taken from 'Food for Health and Vitality' - Serve as a dip with crudites or as a tasty sandwich filling Ingredients:
100 g chickpeas, soaked overnight |
2 garlic cloves, peeled |
3 tablespoons tahini |
1/2 lemon (juice) |
1/2 teaspoon ground cumin |
1 tablespoon water (cold) |
black pepper, freshly ground |
Directions:
1. Cook the chick peas for 2-2 1/2 hours until quite soft or pressure cook at 15 lb pressure for 20 minutes. Drain and mash with the remaining ingredients. For a smoother texture place in a liquidizer, adding a little exra water if required. |
