Ingredients:
1 (14 ounce) can chickpeas, drained (liquid reserved)
1/2 cup tahini
2 garlic cloves, minced
1 lemon, juice of
1/4 teaspoon salt
ground pepper
Directions:
1. Blend all ingreds together.
2. Adding just enough chickpea liquid to make a smooth paste.
3. Serve in bowl – garnish with olive oil, chopped parsley, pine nuts & a sprinkle of paprika.
4. Options to try: marinated red peppers, avocados, or chives.
5. Tip: Global Market on East Lake Street at the Holy Land market, you can get a huge jar for $4-$5.
6. Also: for dried chickpeas 1# dry = 33oz prepared.
