Humming Bird Cake and Frosting |

I have had this recipe for years and years. Don't remember where it came from. Ingredients:
3 cups flour |
2 cups sugar |
3 whole eggs |
8 ounces crushed pineapple, undrained |
1/2 teaspoon salt |
1 teaspoon ground cinnamon |
3/4 cup oil |
1 teaspoon baking soda |
1 1/2 teaspoons vanilla |
1/2 cup pecans, chopped |
1 cup pecans |
1 3/4 cups bananas, mashed |
Directions:
1. Combine flour, soda, salt, sugar and cinnamon. 2. Add eggs and oil. 3. Stir until dry ingredients are moistened. 4. DO NOT BEAT. 5. Stir in vanilla, pineapple, 1 cup pecans, and bananas. 6. Pour batter into 3 greased and floured 9-inch round pans. 7. Bake at 350°F for 23-28 minutes. 8. Cool in pans for 10 minutes. 9. Remove from pans and let cool completely on wire rack. 10. Frost with Humming Bird Cake Frosting (Humming Bird Cake Frosting). |
