These are a unique snack that we always have around the house during the Christmas season. Some people (like me) love them, and some people just think they're just ok, but no one can tell what's in them. I always double this recipe! Ingredients:
1 (8 ounce) package chopped dates |
1/2 cup butter |
3/4 cup sugar |
1 cup chopped pecans |
1 1/2 cups rice krispies |
1 teaspoon vanilla |
1 pinch salt |
confectioners' sugar |
Directions:
1. Mix dates, butter, and sugar in large saucepan. Cook 8 minutes over medium-low heat, stirring continuously to avoid burning. 2. Remove from heat. Add other ingredients, stirring carefully to avoid crushing the rice krispies. 3. Let cool for a few minutes until mixture is cool enough to handle. Roll into finger size nuggets and dip in confectioner's sugar to coat. Set out on wax paper to finish cooling. Store at room temperature in airtight container for up to 2 weeks. |
