An authentic mexican recipe. This was a great keeper from an ex-mother-in-law, Carmen Richards. Ingredients:
1/2 bunch cilantro, chopped |
8 tomatoes, chopped |
1 medium onion, chopped |
1 1/2 medium jalapenos, minced |
garlic salt (lowerey's with parsley) |
milk |
8 eggs |
2 -3 tablespoons oil |
salt |
pepper |
flour |
Directions:
1. Fry chopped veggies in oil. Add garlic salt, salt and pepper to taste. 2. When tomatoes are cooked, mash with vegetable masher. 3. Add cilantro. 4. Simmer veggie mix 5 minutes. If too thick, add water. 5. Scramble eggs with milk and flour. 6. Top eggs with salsa and enjoy. |
