Soooo easy. Ingredients:
15 ounces black beans, rinsed and drained |
1 1/4 cups salsa |
4 eggs |
3 ounces mexican cheese, shredded |
tortilla (optional) |
Directions:
1. In 10-inch skillet, mix black beans, salsa, and 1/4 cup water. Heat to boiling over high heat, stirring frequently. 2. Break eggs, one at a time, into a custard cup and slip onto top of bean mixture. Reduce heat to med-low; cover. Simmer until white are completely set, and yolks begin to thicken, about 5 minutes. 3. To serve, sprinkle bean mixture and eggs with cheese. |
