I found this recipe on the web... it sound good for those day when onLY HOT will do... you can kick it up if you want to ..use pepper jack cheese and other hot peppers... but for me it is way hot enough!!!
Ingredients:
1/2 pound hot country style sausage
1/2 pound mexican style pork chorizo
1 large onion, chopped
1/2 cup red bell pepper, chopped
10 canned jalepeno chiles, chopped
1 cup grated cheddar cheese
1 cup grated jack cheese
4 eggs
1 cup milk
1 cup cilantro, washed and chopped
flour tortillas
1-10 inch pie pan
Directions:
1. Fry sausage and chorizo together.
2. Add onion and bell pepper
3. and fry to wilt.
4. Drain, but save, rendered fat.
5. Beat eggs and milk together.
6. Stir jalepenos and cilantro
7. into egg/milk mixture.
8. Using a basting brush,
9. paint both sides
10. of 3 to 4 flour tortillas
11. with rendered fat and
12. cover the bottom and
13. sides of the pie pan,
14. tearing the tortillas
15. and overlapping as necessary
16. to fill the gaps.
17. Repeat, with another layer
18. of tortillas painted
19. with rendered fat as before.
20. Spread sausage, chorizo,
21. onion, bell pepper mixture
22. over tortillas.
23. Spread the cheddar
24. and jack cheeses
25. over sausage.
26. Pour the egg/milk/
27. chile/cilantro mixture
28. over the cheese.
29. Bake in 375 degree oven
30. until pie is set.
31. Serve with salsa fresca
32. and sliced jalapenos.
33. Makes one 10 inch pie.
