These are soft chocolate cookes with a marshmallow filling. The recipe comes from Gooseberry Patch's Country Baking cookbook. These are yummy and won't last long! Yield and prep/cooking time are estimates and do not include cooling time.
Ingredients:
3/4 cup shortening
2 eggs
3/4 cup cocoa
1 1/2 teaspoons vanilla
1 1/2 cups sugar
3 cups all-purpose flour
3 teaspoons baking powder
3/4 teaspoon salt
1 1/2 cups milk
1 1/2 teaspoons vanilla
1/8 teaspoon salt
1 tablespoon milk
3/4 cup butter
2 cups powdered sugar
1 cup marshmallow creme
Directions:
1. Preheat over to 400 degrees.
2. Cream together shortening, eggs, cocoa, 1 1/2 tsp vanilla and sugar.
3. Sift together flour, baking powder and 3/4 tsp salt.
4. Add 1 1/2 cups milk to cocoa mixture alternating with dry ingredients.
5. Mix well after each addition until batter is smooth.
6. Drop by tablespoonfuls onto ungreased baking sheets.
7. Bake at 400 degrees for 7-8 minutes; cool.
8. Blend together filling ingredients; spread on the bottom of a cookie and top with another.
9. Store in an air-tight container.
