From my Huckleberry Cookbook, a friend gave me. I haven't tried it yet, but it sounds divine! And for the terrible lack of huckleberry recipes on here, I thought it'd be good to throw it out there for you, in case, like me, you haven't even seen a huckleberry until you were 27, let alone know what to do with one lol Ingredients:
3/4 cup flour |
1/2 cup sugar |
1/2 teaspoon cinnamon |
6 tablespoons unsalted butter, chilled and cut into 1/2 inch cubes |
5 cups huckleberries |
Directions:
1. Preheat oven to 375 degrees. Generously butter a 13x9x2 inch baking dish. 2. In a medium mixing bowl, combine flour, sugar and cinnamon. With a pastry cutter or fingertips, work in the butter until mixture resembles course meal. 3. Arrange an even layer of huckleberries in a prepared dish. Sprinkle crumb mixture over berries. Bake about 20 minutes or until the top is brown and juices are bubbling. 4. Best served a la mode. |
