Hubbys Honey Roasted Pumpkin Soup |

My Hubby created this delish pumpkin soup recipe for a cafe he worked in and it was a true hit. We all love it for a vegetarian dinner. Ingredients:
1 pumpkin |
1 onion |
1 red or green capsicum |
half a cup of honey |
2 tbsp curry powder |
veg stock |
cream |
Directions:
1. Chop up your pumpkin , capsicum and onion 2. place into a roasting dish 3. cover with a little oil and the honey 4. sprinkle over the curry powder and roast. 5. pile roasted veg into a pot, 6. deglase the roasting pan with a little water and add 7. top up with veg stock to however much you need 8. use a stick mixer to blend to a smooth consistancy 9. add the cream and reheat 10. awesome with Garlic and herb monkey bread. |
