this is a chunky and creamy salad. great for picnics Ingredients:
1 lb potato |
1/2 cup cider vinegar |
1/2 cup red onion |
1/2 cup plain fat-free yogurt |
1 teaspoon dijon mustard |
1/4 cup parsley |
2 teaspoons cilantro |
1/4 teaspoon pepper |
1 cup cherry tomatoes |
Directions:
1. Fill the bottom of a steamer with water and bring to a boil. 2. Place the potatoes inside the basket, cover and steam for about 10 min until tender. Cool for 5 min and cut into chunks. 3. Combine the yogurt and the rest of ingredients. Put in the fridge for a few hours until chilled. |
