Make up a batch of Howard's Tomato Sauce when your recipe calls for tomato sauce. This homemade sauce is tasty and satsifying. Ingredients:
2 tablespoons olive oil |
3 cups vertically sliced onion |
1 cup chopped green bell pepper |
2 garlic cloves, minced |
1 cup water |
1 cup dry red wine |
1/2 cup chopped fresh parsley |
1 tablespoon red wine vinegar |
1 teaspoon salt |
1/2 teaspoon sugar |
1/4 teaspoon cumin seeds, crushed |
1/4 teaspoon dried basil |
1/4 teaspoon dried thyme |
1/4 teaspoon crushed red pepper |
1/4 teaspoon freshly ground black pepper |
1 (28-ounce) can whole tomatoes, undrained and coarsely chopped |
Directions:
1. Heat oil in a large Dutch oven over medium heat. Add onion, bell pepper, and garlic; saute 7 minutes or until tender. Stir in water and remaining ingredients, and bring to a boil. Reduce heat, and simmer, uncovered, until reduced to about 6 cups (about 1 1/2 hours). |
