Ingredients:
12 large leeks (about 4 1/2 pounds) |
2 tablespoons butter or margarine, melted |
salt and pepper to taste |
Directions:
1. To Clean: Discard outer leaves; cut off root and cut top leaves to where dark green begins to pale. Wash carefully under cold running water to remove grit. Leeks may be prepared whole, sliced in half, or cut into pieces as directed in recipe. 2. To Boil: Cook leeks in boiling water to cover 15 minutes or until tender. Drain well. Arrange on serving dish. Pour melted butter over leeks, and sprinkle with salt and pepper to taste. 3. Other Cooking Methods: Braise in chicken broth; steam. 4. Serving Suggestions: Leeks may be served with any of the following: Cheese Sauce, Fresh Tomato Sauce, or any hollandaise, sour cream, or white sauce. Chilled cooked leeks may be served with salads. |
