With time and effort they turn out great. Ingredients:
1 lb chicken wings washed patted dry. |
for the brine. |
2 cups of chicken stock |
1 cup of kosher salt |
1 tsp of black pepper corns. |
1 tsp garlic powder |
1 tsp onion powder |
1 tsp chili powder |
2 chipotle chiles in adobo sauce. don't drain sauce |
for the breading |
2 cups of flour |
1tsp of salt |
1 tsp of pepper |
1 tsp garlic powder |
1 tsp of cayanne pepper |
64 oz of cooking oil high temp oil, ex vegtable oil |
Directions:
1. To make the brine add all ingredance, and bring to a boil. Cool to room temp, and add your chicken wings, stick in the fridge over night. 2. Heat your oil to about 375. 3. Mix your breading, lightly coat your chicken wings, let them set for about 20 mins, so the flour mixture sets. 4. Then fry for about 10 - 15 mins 5. Serve with your favorte dipping sauce. |
