Ingredients:
4 yellow banana peppers |
2 green banana peppers |
2 jalapeƱo peppers |
4 to 5 large tomatoes |
2 garlic cloves, minced |
1 tablespoon chopped fresh basil |
1 tablespoon chopped fresh parsley |
1 teaspoon chopped fresh rosemary |
1 teaspoon chopped fresh oregano |
2 ounces smoked cheddar cheese, cubed (optional) |
1/2 cup olive oil |
1 tablespoon lemon juice |
1 teaspoon salt |
1/2 teaspoon pepper |
2 teaspoons sugar (optional) |
garnish: fresh basil sprig |
Directions:
1. Remove and discard seeds from peppers and tomatoes. Dice peppers and tomatoes; place in a large bowl. Toss in garlic, herbs, and, if desired, cheese. 2. Stir together oil, next 3 ingredients, and, if desired, sugar; add to tomato mixture, tossing to coat. Cover and chill 2 to 4 hours. Serve with a slotted spoon. Garnish, if desired. |
