I came across this receipe in the Potluck Cookbook. It sounds really good and I can't wait to make it. Ingredients:
2 tablespoons olive oil |
1 cup chopped onion |
1 cup celery, chopped |
2 garlic cloves, minced |
1 (15 ounce) can garbanzo beans, rinsed and drained |
1 (15 ounce) can kidney beans, rinsed and drained |
1 cup chopped tomato |
1 (8 ounce) can tomato sauce |
1 cup water |
1 jalapeno pepper, minced |
1 tablespoon chili powder |
2 teaspoons sugar |
1 1/2 teaspoons ground cumin |
1 teaspoon salt |
1 teaspoon dried oregano leaves |
1/4 teaspoon black pepper |
2 1/2 cups frozen cut green beans |
Directions:
1. Heat olive oil in large skillet over medium heat until hot. Add onions, celery and garlic. Cook and stir 5 minutes or until onions are translucent. 2. Add remaining ingredients except green beans. Simmer, uncovered, 10 minutes or until green beans are just tender. |
