Smoky hot bbq thai mussels with garlic and thai spices Ingredients:
1 lb mussels |
1/4 cup fresh basil leaf, chopped |
6 thai red chili peppers, finely chopped (or 2 jolokia peppers) |
4 garlic cloves, chopped |
1 teaspoon lemongrass, chopped |
1/8 teaspoon extra virgin olive oil |
1/2 cup green onion, chopped |
1/2 teaspoon fish sauce |
1/8 teaspoon sea salt |
1/2 cup water |
Directions:
1. clean and debeard mussels. 2. cook mussels on hickory bbq until open. 3. discard any unopened mussels. 4. set aside cooked mussels. 5. heat oil in saute pan. 6. add onion and garlic to oil until golden. 7. add lemongrass, fish sauce, water, salt and chile peppers. 8. simmer for 5 minutes. 9. add mussels and basil to mix. 10. stir until hot and serve. |
