My whole family loved it. Ingredients:
1 pound ground beef |
1 onion chopped |
2 or more cloves of garlic |
1 bell pepper chopped |
1 tbsp chilli powder |
2 tsp ground cumin |
1/2 tsp cayenne pepper |
pinch of cinnamon |
3 cups chicken broth |
1 14 oz chopped can tomatos with juice |
12 purchased tamales (i did frozen ones ) |
1 15 oz can of pinto beans rinsed and drained |
1 cup frozen corn |
shredded cheddar for topping |
Directions:
1. Heat large heavy sause pan on Medium- heat 2. Add first 4 ingredients and cook until beef is browned and breaking apart 3. Add chilli powder,cumin, cayenne and cinnamon and cook for about one minute 4. Add broth and tomatoes with juice cover and simmer for 30 minutes. 5. While this is simmering heat tamales according to package instructions 6. Stir beans and corn into soup and simmer until corn is heated through 3 mins. 7. season with salt and pepper. 8. Place 2 tamales in each bowl ladle in soup and sprinkle top with chedder cheese. |
