From Cuisine at Home Ingredients:
1 1/2 lbs sweet potatoes, cubed |
1 tablespoon sugar |
1 tablespoon oil |
1 teaspoon kosher salt |
1/2 teaspoon red pepper flakes |
3 slices bacon |
1/2 cup red onion |
1/4 cup apple jelly |
2 tablespoons cider vinegar |
1/4 cup pecans |
2 tablespoons lime juice |
2 tablespoons green onions |
Directions:
1. Pre-heat oven to 425 deg. 2. Toss potatoes with sugar, oil, salt and pepper. 3. Roast at 425 deg. for 25-30 minute on a jelly roll pan. 4. Saute bacon til crisp and add onion. Saute for 3 minute. 5. Add jelly and vinegar til it melts. Remove from heat. 6. Toss with bacon, pecan, lime and green onion. 7. Season with salt and pepper. |
