This is something I came up with the other night. It is extremely easy and fast to make - but very spicy! I made it for two, but you can increase ingredients easily. I had mine over rice, but hubby had his with corn tortillas. Read more . Add a Dos Equis and you've got dinner! Ingredients:
amylu's tequila/lime chicken sausage (costco) i used 5 |
chopped onion (about 1/2 cup or more) |
chopped red bell pepper (i used one half) |
1 can herdez ranchera salsa (very hot) |
1 cup (or more) shredded mexican blend cheese |
sour cream (optional) |
cilantro (optional) |
Directions:
1. Slice sausage into bite size pieces, however you like 2. Add a little olive oil to frying pan over medium heat 3. Add chopped onions, peppers, and sausage to pan 4. Cook, stirring occasionally till sausage is browned a bit and peppers, onion are al dente 5. Add Ranchera sauce (you can use a milder salsa if you're heat sensitive) 6. Simmer till good and hot. 7. (mushrooms and/or black olives would be good in this too) 8. Put over rice or in tortillas with cheese, sour cream and cilantro. |
