Eat this hearty chili as is or over rice. Ingredients:
2 tablespoons olive oil |
1 large onion, cut into 1/2-inch dice |
1 pound sweet italian sausage, removed from casing |
2 teaspoons chili powder |
2 teaspoons ground cumin |
1 teaspoon dried oregano |
1/2 teaspoon crushed red-pepper flakes |
2 pounds leftover roast beef , cut into 1 1/2-inch cubes |
2 cups drained canned italian plum tomatoes, crushed |
2 cups beef broth |
6 tablespoons tomato paste |
1 tablespoon chopped chipotle peppers in adobo sauce |
1 tablespoon brown sugar |
1 red bell pepper, diced (1/2 inch) |
salt and pepper, to taste |
Directions:
1. Heat the oil in a large pot over low heat. Add the onion; cook 10 minutes. Crumble in the sausage; brown over medium-high heat about 10 minutes. Stir in remaining ingredients. Simmer, uncovered, for 45 minutes, stirring occasionally. 2.
