A spiced up version of the original. Made with salsa and monterey jack cheese to give it a mexican kick, served with tortilla chips for a perfect dip.. Ingredients:
1 (10 oz) package frozen spinach, thawed and with liquid removed, chopped |
2 cups monterey jack cheese, shredded |
1 (16 oz) jar salsa |
1 (2.25 oz) can black olives, drained and chopped |
1 (8 oz) package cream cheese, softened and finely chopped |
1 cup evaporated milk |
1 tbsp red wine vinegar |
salt and pepper (to taste) |
Directions:
1. Preheat oven to 400 degrees F. 2. Combine spinach, jack cheese, salsa, cream cheese, olives, evaporated milk, black olives, red wine vinegar, salt and pepper in a medium baking dish. 3. Bake for 12-15 minutes, or until bubbly. |
