HOT SLAW This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pusey Estate in Plano Texas in 1991.
Ingredients:
1 tablespoon butter
4 cups red cabbage shredded
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. In a medium saucepan over medium heat melt butter.
2. Stir in cabbage, 2 tablespoons vinegar and 3/4 teaspoon sugar.
3. Cook uncovered over medium heat stirring occasionally for 5 minutes.
4. Ad remaining vinegar and sugar during last minute of cooking.
5. Season with salt and pepper and serve immediately.
