Hot Skillet Sirloin Wraps with Blue Cheese |

This rolled sandwich is similar to steak fajitas but with a flavor twist-a tangy blue cheese and sour cream sauce. Ingredients:
1/2 cup plain fat-free yogurt |
1 garlic clove, minced |
1 tablespoon minced green onions |
1/4 cup crumbled blue cheese |
1/2 teaspoon salt, divided |
1 (3/4-pound) sirloin steak, cut into 1/4-inch-thick diagonal strips |
1 1/2 teaspoons chili powder |
1/2 teaspoon dried oregano |
1 teaspoon olive oil |
1 green bell pepper, thinly sliced |
4 (8-inch) flour tortillas |
2 cups torn spinach |
1/4 teaspoon black pepper |
Directions:
1. Combine first 4 ingredients and 1/4 teaspoon salt, stirring well. Set aside. 2. Sprinkle steak with chili powder, oregano, and remaining salt. Heat oil in a large nonstick skillet over high heat. Add steak and green pepper; sauté 2 minutes or until meat is done and pepper strips are tender. 3. Warm tortillas according to package directions. Spoon about 3/4 cup steak mixture down center of each tortilla. Top each with 1/2 cup spinach and 2 tablespoons yogurt mixture. Sprinkle with black pepper; roll up. Serve immediately. |
