I first tasted this dip at a PSU tailgate, and it was absolutely delicious. However... Sausage, cheese, sour cream, and cream cheese don't make for the healthiest of dips! So I found a recipe that sounded good and lightened it up for New Years Eve Ingredients:
1 lb hot italian turkey sausage |
1 small onion, diced |
2 (10 ounce) cans rotel tomatoes & chilies |
1 (8 ounce) package neufchatel cheese |
1 1/2 cups light sour cream |
1/2 cup shredded cheddar cheese |
1 teaspoon crushed red pepper flakes |
salt and pepper |
Directions:
1. Remove casings from turkey sausage links and brown in a skillet with diced onions and crushed red pepper flakes. 2. Once turkey sausage is cooked through, drain fat from skillet. 3. Drain both cans of Rotel and add to sausage and onions. 4. Add cream cheese, sour cream, and shredded cheddar cheese to skillet and remove from heat once the cheese has melted and the mixture has combined. 5. Season to taste with salt and pepper. 6. Transfer to mini slow cooker to keep warm, and enjoy with thinly sliced baguette or tortilla chips. |
