This is a wonderful way to fix quinoa. Quinoa is a gluten-free grain that is really high in protein. You can find it in healthfood stores, or in grocery stores with the grains. Ingredients:
2 cups quinoa, cooked |
1 cup bacon |
1/2 cup onion, chopped |
1 (3 ounce) can green chilies, chopped |
1 cup vegetable broth |
Directions:
1. Chop bacon, put in skillet with onions and cook well. 2. Drain, add quinoa, green chili and broth. 3. Cook on medium heat until broth is absorbed. |
