I was searching for an easy German potato salad and came across this one in an old 1966 Better Homes and Garden Paperback recipe book I own. It was so good I thought I'd share it. Ingredients:
1/2 lb bacon (save 1/3 cup drippings) |
1/3 cup vinegar, plus |
water, to make 1/2 cup |
1 slightly beaten egg |
1 teaspoon sugar |
1 teaspoon salt |
1/4 teaspoon pepper |
5 cups diced cooked potatoes |
1/2 cup chopped onion |
Directions:
1. Cook bacon crisp: crumble. 2. Combine 1/3 cup bacon drippings with Vinegar/water, egg, sugar, salt, and pepper. 3. Heat and stir till thickened. 4. Add potatoes, onio and bacon: toss, heat through. |
