Incredible and awesome. Good enough to serve company. Ingredients:
4 eggs |
1/2 cup bacon diced |
1/2 cup red onion diced |
1 tablespoon butter |
12 fresh tarragon leaves finely chopped |
2 ounces hot pepper cheese sliced or crumbled |
1/2 teaspoon se salt |
1 teaspoon freshly ground black pepper |
1/4 teaspoon garlic powder |
Directions:
1. Cook bacon in a non stick skillet. 2. Add half the onions when the bacon is about 3/4 done. 3. Continue cooking until onions are translucent. 4. Drain by putting bacon and onions on paper towels in a plate. 5. In a bowl beat eggs, sea salt, black pepper, garlic powder and tarragon together. 6. Wipe skillet clean of bacon drippings. 7. Add butter to skillet and melt. 8. Return cooked bacon and onions to skillet set at medium low heat. 9. Add remaining onion to skillet and cook 2 minutes. 10. Add egg mixture to skillet and cook eggs until almost set. 11. Add hot pepper cheese to half the omelet and fold over. 12. Cook another 4 minutes. |
