Thought this would be a nice glaze for shrimp or flank steak. Ingredients:
1 tablespoon vegetable oil |
1 yellow onion, minced |
1 tablespoon garlic, minced |
3 serrano chilies, diced |
1 tablespoon coriander seed |
2 tablespoons chili powder |
1 tablespoon cumin |
salt and pepper |
1/2 cup orange juice |
2 tablespoons molasses |
1/2 cup white vinegar |
1/2 cup chicken broth |
2 tablespoons cornstarch |
4 tablespoons cold water |
Directions:
1. In a heavy bottom saucepan heat oil. Saute onion 5-7 minutes. 2. Add garlic and serrano chile and saute for 2 more minutes. 3. Add remaining ingredients except the cornstarch and 4 tbsp water. 4. Bring mixture to boil and simmer 20 minutes. 5. In small bowl mix cornstarch and 4 tbsp cold water. Slowly add cornstarch mixture to glaze. 6. Simmer until thickened and remove from heat. |
