A very fresh and light appetizer can be served either hot or cold... I prefer serving cold, but I'm posting both...
Ingredients:
6oz. water packed chunk light tuna, well drained
4oz. reduced-fat cream cheese
1tbs. minced onion
1tbs. chopped fresh parsley
1/2tsp. dried oregano
1/2tsp. white pepper
18 slices seedless cucumber
18 capers, rinsed and drained, is optional
Directions:
1. Combine tuna, cream cheese, onion, parsley, oregano and pepper in medium bowl.
2. Mound about 1 tablespoon tuna mixture (enough to completely cover) over top of each cucumber slice. If serving cold, garnish with capers, and serve.
3. To serve hot, preheat oven to 500F. Spray baking sheet with nonstick cooking spray. Place snacks on prepared baking sheet and bake about 10 minutes or until tops are puffed and brown. Remove from oven and transfer to serving plate. Garnish with capers, and serve.
