A nice light lunch with a little heat. Add chipotle hot sauce for a little more kick. Ingredients:
1 (19 ounce) can navy beans |
3 green onions, chopped |
2 stalks celery, chopped |
1/3 cup roasted red pepper, chopped |
1/4 cup light mayonnaise, type dressing |
1/4 teaspoon salt |
1/4 teaspoon ground black pepper |
2 tablespoons mccormick mild chili seasoning (i use clubhouse sweet chili & peppers) |
1/2 teaspoon sugar |
1/2 teaspoon lemon juice |
4 whole wheat tortillas |
Directions:
1. Drain and rinse beans. 2. Mash lightly in a bowl. 3. Add remaining ingredients except tortillas. 4. Mix well. 5. Let sit for at least 30 minute. 6. Serve on whole wheat tortillas with alfalfa sprouts or shredded lettuce. Add cheddar or Monteray Jack cheese if desired. |
