Hot Mango And Banana Salad |

A salad with a difference as it is served hot. Very quick to prepare, it is just right for when you have a sudden craving for something special... Ingredients:
2 large oranges |
2 firm but ripe mangoes |
4 small bananas |
25 grs low-fat spread |
2 tsp light soft brown sugar |
2 tbsp malibu or rhum |
2 tbsp lemon or lime juice. |
Directions:
1. Thinly pare the rind of one orange and squeeze the juice. 2. Cut the pared rind into very thin strips and blanch in boiling water for 1 minute to soften. 3. Set the rind and juice aside. 4. Peel the other orange and slice across. 5. Peel the mangoes and slice the flesh either side of the stone. 6. Cut all the flesh into bite-sized pieces. 7. Peel and slice the bananas, not too thin. 8. Melt the low-fat spread in a large non-stick frying pan. Add the sugar and fruits and sauté for 2-3 minutes or until they just begin to soften. 9. Pour in the Malibu or rhum, lemon or lime juice and the reserved orange juice. 10. Add the orange slices and bring to the boil. 11. serve immediately decorated with the reserved orange rind. |
