For a dazzling side-dish, use red and yellow cherry tomatoes. This is a nice brunch dish, especially in the summer when tomatoes are plentiful. Ingredients:
2 pints cherry tomatoes, halved |
3/4 cup soft breadcrumbs |
1/3 cup onion, minced |
1/3 cup fresh parsley, chopped |
1 clove garlic, minced |
1/4 cup fresh basil, chopped |
1 teaspoon fresh thyme, chopped |
3/4 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup olive oil |
2 teaspoons olive oil |
Directions:
1. Place cherry tomato halves in a lightly greased 11x7 baking dish. 2. Combine breadcrumbs and next 7 ingredients in a medium bowl, stirring well. 3. Sprinkle breadcrumbs mixture evely over cherry tomatoes. 4. Drizzle with olive oil. 5. Bake, uncovered, at 400 degrees for 7-9 minutes, or until thoroughly heated. 6. Serve immediately. |
