Hot German-Style Potato Salad |

This is an old-fashioned recipe with a lot of down-home flavor. A perfect starch to serve with lean meat loaf, burgers, pork tenderloin, or skinless chicken breasts. Adapted from the American Diabetes Association. potatoes, bacon, vinegar, egg, sugar, salt, black pepper, onion cvt Ingredients:
1 1/4 pounds peeled, boiled potatoes (from about 3 raw medium) |
5 slices cooked bacon |
1 tbsp lard (bacon fat) |
1/4 cup vinegar |
1 egg |
2 tsp sugar |
1/4 tsp salt |
1/4 tsp fresh ground black pepper |
1/2 cup chopped onion |
Directions:
1. Peel and halve the potatoes and cook in boiling water until tender. Drain and slice. Set aside. 2. Cook the bacon until crisp. Drain, reserving 1 tablespoon of bacon fat. Crumble the bacon and set aside. 3. In a large nonstick skillet, combine the 1 tablespoon bacon fat, the vinegar, 1/4 cup water, the egg, sugar, salt, and pepper. Place over moderately low heat and stir constantly until the dressing is thickened; do no allow the egg to coagulate. 4. 4. Add the reserved potatoes and crumbled bacon; stir in the onion. Mix and heat through. Serve hot. |
