THIS GERMAN POTATO SALAD HAS BEEN MADE IN OUR FAMILY FOR AS LONG AS I REMEMBER. SERVED WITH METTS OR BRATWURST. Ingredients:
8 medium potatoes or 15-20 new potatoes |
10 slices bacon, cut into small pieces(before cooking) |
1 1/2 onion, diced |
2 tbs flour |
2 tbs sugar |
2teas salt |
3/4 teas celery seed |
1/4 teas pepper |
3/4 cup water |
1/3 cup vinegar |
Directions:
1. PEEL AND SLICE POTOTOES 1/4 THICK. IF USING NEW / RED POTATOES, THERE IS NO NEED TO PEEL. IN SAUCEPAN, HEAT 1 SALTED WATER TO BOILING. ADD POTATOES. COVER, COOK 20 MIN OR UNTIL TENDER BUT FIRM. DO NOT OVER COOK OR IT WILL BE MUSH. MEANWHILE, CUT BACON INTO SMALL PIECES. PLACE IN LARGE FRYING PAN ON MEDIUM HEAT HEAT. FRY UNTIL CRISP. WHILE THIS THIS FRYING, DICE ONIONS. REMOVE CRISP BACON FROM FRYING PAN AND PLACE ON A PAPER TOWEL. ADD ONIONS TO DRIPPING. COOK UNTIL BROWN AND TENDER. REMOVE SKILLET FROM BURNER. ADD FLOUR, SUGAR, SALT, PEEPER, AND CELERY SEED. PLACE BACK ON BURNER AT LOW HEAT. COOK UNTIL BUBBLY. REMOVE FROM HEAT, SLOWLY ADD WATER, STIRRING CONSTANTLY. ADD VINEGER. PLACE BACK ON BURNER. HEAT TO BOILING. ABOUT 1 MINUTE. ADD BACON AND POTATOES. |
