A great tasting recipe from Woman's Day Book Of Salads. from 1963. I wasn't sure what Angostura bitters was so I substituted it with White Wine. Ingredients:
6 potatoes |
1/2 lb bacon, diced |
1 onion, diced |
1 tablespoon flour |
1/2 cup vinegar |
1/2 cup water |
1 teaspoon salt |
1/2 teaspoon pepper |
1 tablespoon sugar |
2 teaspoons angostura bitters |
Directions:
1. Boil potatoes. 2. Peel and cube. 3. Dice raw bacon and fry in a large skillet until pieces are brown and crisp. 4. Remove bacon bits and drain. 5. Saute onion in bacon fat until soft. Stir in flour. 6. Mix together vinegar, water, salt, pepper, and sugar. 7. Add gradually to fat flour mixture in skillet, stirring constantly over low heat. 8. Add bitters and cook a few minutes until smooth and glossy. 9. Add cooked potatoes and heat thoroughly. 10. Add bacon and mix all together. 11. Serve warm. |
