Hot German Potato Casserole

I like to make this homey side to go with sausages when sauerkraut won't cut it.
Ingredients:
1/2 lb bacon, cooked and crumbled
8 large baking potatoes
2 medium onions, diced
1/3 c vinegar
1/4 c water
8-10 sprigs fresh parsley
1 sprig fresh rosemary
salt and pepper to taste
Directions:
1. Dice potatoes and place in a 9x13 glass baking dish.
2. Fry bacon until crisp, remove and set aside.
3. Reserve about 3 tbsp drippings and saute onions and parsley in this.
4. Add vinegar, water, rosemary, salt and pepper.
5. Bring to boil for about 1 minute.
6. Return cooked and crumbled bacon to pan.
7. Pour mixture evenly over diced potatoes then cover with foil and bake at 350 for about an hour and a half.
8. Add fresh parsley at the end.
