This hors d'oeuvre is as simple as it is flavorful, and it's especially good in the summertime, when the best fresh tomatoes are available. This recipe can be prepared in 45 minutes or less. Ingredients:
6 ounces feta (preferably french) |
2 plum tomatoes |
2 tablespoons extra-virgin olive oil |
2 teaspoons finely chopped fresh oregano leaves or 1 teaspoon dried oregano, crumbled |
freshly ground black pepper |
accompaniment: pita toasts |
Directions:
1. Preheat broiler. 2. Crumble enough feta to measure 1 cup and spread evenly in a shallow 2-cup flameproof baking dish (roughly 9- by 6- by 1-inch) or a small deep flameproof platter. Thinly slice tomatoes crosswise and arrange, overlapping if necessary, on feta. Drizzle oil over tomatoes and sprinkle with oregano and pepper. Broil mixture 2 to 3 inches from heat until cheese is bubbling, 5 to 8 minutes. 3. Serve spread with pita toasts. |
