This is a variation on the more common hot artichoke dip. Friends say they like this one better! Enjoy with your favorite crackers, pita chips, whatever! Ingredients:
4 slices bacon, drained and crumbled |
save 1 tablespoon bacon grease. |
3 medium fennel bulbs, clean and sliced paper thin |
2 cloves garlic, minced (or more!) |
8 ounces mayonaise (not miracle whip) |
8 ounces light sour cream |
4 ounces gorgonzola cheese |
salt and pepper to taste |
topping |
1/4 cup freshly shredded parmesan cheese |
2 tablespoon finely chopped nuts (or panko if preferred) |
**use olive oil if desired |
Directions:
1. Saute fennel slices and garlic in bacon drippings or olive oil 2. Mix sauted veggies with mayonaise, sour cream, Gorgonzola cheese, salt and pepper. 3. Pour mixture in an 8 inch round ceramic baking dish (like the Pampered Chef dish) 4. Top with Parmesan cheese mixture. 5. Bake at 400 degrees for 15-20 minutes |
