Hot Fennel Cheese Dip

This is a variation on the more common hot artichoke dip. Friends say they like this one better! Enjoy with your favorite crackers, pita chips, whatever!
Ingredients:
4 slices bacon, drained and crumbled
save 1 tablespoon bacon grease.
3 medium fennel bulbs, clean and sliced paper thin
2 cloves garlic, minced (or more!)
8 ounces mayonaise (not miracle whip)
8 ounces light sour cream
4 ounces gorgonzola cheese
salt and pepper to taste
topping
1/4 cup freshly shredded parmesan cheese
2 tablespoon finely chopped nuts (or panko if preferred)
**use olive oil if desired
Directions:
1. Saute fennel slices and garlic in bacon drippings or olive oil
2. Mix sauted veggies with mayonaise, sour cream, Gorgonzola cheese, salt and pepper.
3. Pour mixture in an 8 inch round ceramic baking dish (like the Pampered Chef dish)
4. Top with Parmesan cheese mixture.
5. Bake at 400 degrees for 15-20 minutes
