My mother-in-law used to make this on a regular basis to feed her four growing children. My husband still loves it to this day. It is from the era of one income, one car homes, so it is cheap and filling! Ingredients:
2 lbs ground beef |
1 large onion, chopped |
2 stalks celery, chopped |
1 cup green pepper, chopped |
8 ounces egg noodles |
15 ounces corn, canned |
15 ounces peas, canned |
10 3/4 ounces tomato soup, canned condensed |
salt, to taste |
pepper, to taste |
Directions:
1. Brown the ground beef with the onion, celery and green pepper in a skillet, season well with salt and pepper. 2. Drain excess fat. 3. Cook the egg noodles and drain. 4. Pour noodles into a 9 x 13 baking dish. 5. Drain the canned vegetables. 6. Pour the canned vegetables on top of the noodles. 7. Pour the ground beef mixture over all and mix. 8. Pour the can of tomato soup over the top (do not add water!). 9. Mix again. 10. Bake at 325 degrees for 1 hour. Stir once during bake time. |
