This recipe was submitted by Dorothy Fosness for the Bricelyn Women of E.L.C.A Cookbook printed June 1993. Bricelyn, Minnesota is a little town where my dad grew up. This hotdish is a little different because it has both rice and potatoes in it- how rebellious! Ingredients:
1 lb lean ground beef |
2 teaspoons salt |
1 cup diced celery |
1 large onion, chopped |
2 1/2 cups raw potatoes, cubed |
1 cup carrot, diced |
1/4 cup raw rice |
3 cups boiling water |
1/2 cup tomato soup |
1 cup cream of mushroom soup |
Directions:
1. Brown hamburger, salt, celery and onion, and drain fat. 2. Add remaining ingredients. Bake at 350 degrees for 1 1/2 hours in a 2 quart casserole dish. |
