Hot Cross Buns Ingredients:
450g cake flour |
1 tsp salt |
1 tsp mixed spice |
1 tsp cinnamon |
1 tsp ground ginger (optional) |
85g butter |
10g (1 packet) dried yeast |
2.5 tbsp golden brown sugar |
250ml warm milk |
2 eggs |
2 cups mixed fruit (candied peel, currants, sultanas or just seedless raisins) |
zest of one orange |
Directions:
1. 1 Sift the flour, salt and spices into a bowl and rub in the butter. 2. 2 Add the yeast and sugar to the warm milk and when frothy, beat in the eggs. 3. 3 Make a well in the centre of the flour and butter mixture and pour in the liquid. Turn out and knead lightly. The dough should be quite wet. 4. 4 Leave in a warm place to rise (about 20 minutes). 5. 5 Preheat the oven to 200°C. Knock back and knead in the fruit and orange zest. Shape into 5cm diameter balls and place on a baking tray lined with baking paper and sprinkled with flour. Allow to rise for 15 minutes. 6. 6 Combine the ingredients for the cross and pipe over the tops of the buns. Bake for 10 minutes or until golden. 7. 7 In the meantime, simmer the sugar and water for the glaze. Brush the buns with the glaze as soon as they come out of the oven.
