HOT CINNAMON PARFAIT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Channing Estate in Paris, Texas in 1991. Ingredients:
5 large tart green apples peeled cored and coarsely |
1/4 cup sugar |
1/4 cup water |
1/4 cup golden raisins |
1/2 teaspoon ground cinnamon |
7 ounce box shortbread cookies |
1 pint vanilla ice cream |
1/4 cup walnuts chopped |
Directions:
1. In medium saucepan combine apples, sugar, water, raisins and cinnamon. 2. Bring to a boil then reduce heat to medium and cook apple mixture covered for 15 minutes. 3. Stir occasionally and cook until all moisture is absorbed. 4. Place cookies in a bag and crush with rolling pin into crumbs. 5. Divide half the crumbs between serving glasses. 6. Divide apple mixture between serving glasses and top with remaining crumbs. 7. Scoop ice cream onto each and sprinkle with nuts then serve at once. |
