Hot Chocolate And Grand Marnier Cupcakes |

These soft center Souffle cakes are incredibly good. From Bon Apppetit Ingredients:
6 oz. bittersweet chocolate, chopped |
2 tbls. butter, unsalted |
1/2 cup sugar |
2 large eggs |
2 large egg yolks |
2 tbls. grand marnier |
1/4 cup ap flour |
whipped cream for topping |
Directions:
1. Line 12 cup muffin tin with muffin papers 2. In a saucepan, melt butter and chocolate until smooth 3. Remove from heat 4. Beat sugar, eggs, egg yolks, and Grand Marnier with hand mixer until thick ribbon falls when lifted from batter 5. Sift flour 6. Gently fold flour into batter folding over with rubber spatula 7. Fold in chocolate mixture 8. Cover and chill at least 1/2 hour (can be left in fridge as long as overnight) 9. Preheat oven to 400 10. Bake until tops are puffed and cracked, about 7 minutes 11. Toothpick inserted into center should come out with batter attached 12. Top with whipped cream |
