This is great served with tortilla chips or your favorite crackers...Always a big hit at parties. Ingredients:
1 cup mayonnaise |
1/2 cup grated parmesan cheese |
4 oz (1 cup) shredded monterey jack cheese |
3 cans chopped green chiles, drained (4 oz each) |
12 oz can mexicorn, drained |
4 oz jar pimiento, drained |
2 tables sliced ripe olives |
Directions:
1. Heat oven to 325 degrees and grease a 2 quart casserole dish. 2. In medium bowl, combine all ingredients except ripe olives. 3. Stir until well blended. 4. Spoon into prepared casserole and bake for 25 to 30 minutes. 5. Garnish with ripe olives. 6. Serve immediately. 7. Yeild: 4 cups |
