Hot Chicken Salad With Pineapple |

The pineapple is an interesting twist. Ingredients:
4 chicken breasts |
1 stalk celery, chopped |
1/2 onion, diced |
3/4 cup pineapple tidbits |
1 cup almonds, sliced |
1 (12 ounce) bag croutons, slightly crushed |
1 cup mayonnaise |
2 cups cheddar cheese, shredded |
Directions:
1. Preheat oven to 400°F. 2. Fry or bake chicken breasts, then cut into bite-sized chunks. 3. Mix chicken, celery, onion, pineapple, almonds, croutons and mayonnaise. Spray 9 x 13 baking dish; add mixture. 4. Sprinkle shredded cheese over top and bake for 10-15 minutes or until cheese is melted. |
